Breakfast Meal Prep

I like prepping meals ahead of time. I rarely make entire meals ahead, but I do like to prep components of dishes to make meals easier later on.

For example, I’ll make a big batch of pasta sauce for “5-cheese ziti,” and then I just have to make the pasta. Or, I’ll make a batch of taco filling so I can microwave it later and put it in a taco shell.

Today I tackled breakfast. I cooked up half a lb of sausage with 2-dozen eggs. Then I froze them into 10 burrito-size portions. (I was hoping for 12, but, whatever) This means that there are 5 meals (2 burritos each) mostly ready to go in the freezer.

Cost also matters to me. Since I was buying in bulk, my cost came out to $1.68 per meal of 2 burritos. And that’s way better than if we went to any fast-food joint, or even a convenience store.

I also like to keep the components for my GF mug cake on hand.

The cake batch mix is 1 c rice flour (brown or white), 2 c oat flour, ½ c flaxseed meal, and ¼ c granulated sugar.

Then, I make a big batch of sugar-free chocolate mix: ½ c cocoa powder and 2-2½ c stevia/similar sugar substitute.

Then when I want some spur-of-the-moment mug cake, I can take a spoon (probably a tsp or two) of coconut oil, 1 c of cake mix, ½ c of chocolate mix, mix it up with water (enough to mix), and microwave it for 1 minute. In 10 minutes or less, I can have a mug-full of GF, low-sugar chocolate cake. You can also use the chocolate mix for hot chocolate and mocha coffee.

I love having this stuff at the ready. This way I can have relatively healthy food in moments without buying overpriced convenience food.
