Store herbs in oil

Did you know you can freeze herbs?

You can always dry herbs, but some herbs get so tiny and withered and sad that it doesn’t seem worth it.

For example, garlic chives don’t hold up especially well to drying. In the spring, I get a huge harvest every week, even after we eat as much as we want.

And I’m not about to throw it out.

Since it doesn’t seem to dry well, I freeze it in oil.

I use my cooking shears to snip it into bits. Then I put them in an ice tray with olive oil and freeze it.

Once they’re frozen, I dump all the cubes into a container. Then I can throw them into a pan when I’m cooking.
